Once celebrated exclusively as Chesterfield’s premium steakhouse, The Galleon has evolved into a destination for refined, yet relaxed, fine dining. While our famous steaks and signature lava stone experience remain at the heart of our offering, we now present a diverse menu of beautifully crafted starters, fresh seafood, innovative mains, and indulgent desserts — all prepared with the highest quality, locally sourced ingredients.

Matt’s culinary journey began as a pot washer, eventually rising through the ranks to work alongside world-renowned chefs, including a formative time under Gordon Ramsay at the prestigious Hospital Road restaurant in London. After honing his craft in Guernsey, Scotland, and across Derbyshire, Matt earned accolades as Head Chef at The Peacock Hotel in Rowsley, achieving two AA Rosettes, and later as Executive Head Chef at Chesterfield’s Casa Hotel, before successfully launching his first independent venture, Aubergine.

With a continued passion for quality and creativity, Matt founded The Galleon Restaurant, transforming a once run-down pub into a contemporary venue known for its welcoming atmosphere, exceptional food, and personal touch. Today, The Galleon has become a true local favourite, blending premium steakhouse classics with a wider fine dining experience that caters to all tastes.

Building on this success, Matt recently expanded his portfolio with the acquisition of The Spread Eagle, another iconic venue in Chesterfield. The Spread Eagle brings a vibrant and casual dining experience to the town, featuring creative tapas dishes, pub classics, and a welcoming bar atmosphere. Together, The Galleon and The Spread Eagle reflect Matt’s vision of offering outstanding dining experiences that combine quality, creativity, and genuine hospitality.
