Matt would like to welcome you to The Galleon Restaurant, where we endeavor to make your night special, whatever the occasion.

The Galleon Restaurant boasts a great variety of steaks, ranging in multiple sizes depending on how hungry you are!! We pride ourselves on our high quality of food, service - and indeed attention to detail. We endeavor to maintain this high standard at all times, making sure your experience will keep you wanting more!!

Many years ago, Matt started his career as a pot washer! Since then, Matt has developed into a very creative chef, benefitting from guidance from many role models at the highest level, including celebrity chefs. Matt started his chef career in London working alongside celebrity chef Gordon Ramsey, where he picked up many of Gordon's imaginative dishes - along with some of his habits!!

Before moving to Guernsey and then onto Scotland, Matt spent 3 years in the kitchen of Hospital Road restaurant in London. After a while, Matt decided that he would return to Derbyshire to make his name for himself as a chef in his own right. At the age of just 23 years old, Matt was appointed as Head Chef at The Peacock Hotel at Rowsley. Matt was in this role for 4 years, during which time he managed a team of up to 8 chefs and his efforts resulted in the hotel being awarded with 2 highly acclaimed AA Rosettes.

Matt then moved closer to his hometown and became the head chef at The White horse at Woolley Moor, where he spent another 3 years. He then moved onto a new venture back in his hometown, where he became the executive head chef of the newly built Casa Hotel in Chesterfield town center. Matt spent a lot of time and efforts to make the food look, taste and smell amazing in every mouthful. His inspiration came from the many chefs that had taught him a variety of skills along his journey to where he is today.

After a couple of years as executive head chef, Matt decided to embark in an adventure of their own. he took a risk to build up their own restaurant on Whittington Moor, which they called Aubergine. After a little bit of stress, blood and tears he opened Aubergine 3 years ago and have since become very successful.

Matt finds is job very rewarding and always aim to please their customers to the best of their ability. Good standards are kept at all times, producing dishes that contain many ingredients, which are sourced locally, and are of great quality.

During is visit to the USA, Matt spent a lot of time eating out in steakhouses. This fuelled their ambition to add to their portfolio and create The Galleon Restaurant, which is situated in the town center of Chesterfield. Matt amongst great family members, helped turned this run down pub into a high class contemporary steakhouse, which not only offers steak, but the opportunity to cook the steak at your table on a hot lava stone. An experience, which should not be missed!!

The Galleon Restaurant is very inviting and we look after our diners to the best of our ability, ensuring a great atmosphere, great service and wonderful food!
